When a snack attack hits (for me, that’s usually mid-afternoon) it’s important to make sure I’m prepared with something that is both healthy and satisfying. If it’s portable and easy to eat on the run, all the better. Energy Bites are the perfect snack and, lately, I’ve been making this peanut butter version just about every week. They are the perfect combination of protein, fiber and healthy fat and, for that reason, two of them at about 3pm usually hold me over until dinnertime.
I add some dark chocolate chips, which make them even more of a treat, but feel free to leave those out if you’d prefer not to have them. They’re delicious either way and will stay fresh for about two weeks (if they last that long!) when stored in an airtight container in the refrigerator.
Here’s the recipe:
Peanut Butter Energy Bites:
½ cup creamy peanut butter
1 cup uncooked old fashioned oats (to make this recipe gluten free, simply use GF oats)
⅔ cup unsweetened shredded coconut
½ cup ground flaxseeds
3 Tbsp. raw honey
3 Tbsp. coconut oil
1 tsp. vanilla extract
⅓ cup dark chocolate chips (optional)
In a mixing bowl, stir together peanut butter, coconut oil, honey and vanilla extract. Add remaining ingredients and stir until well combined. Place the bowl in the freezer and chill until set (about 30-45 minutes). Remove bowl from the freezer and shape dough into 1-inch balls. Store in an airtight container in the refrigerator for up to two weeks.
Makes approximately 20-24 Energy Bites.
